When I was just a kid, I remember that "Uncle Val" was a bouncer at Shanghai Restaurant on King St., just across from the Nanking. I seem to remember that he was the only "white" guy working there and that the Chinese just loved him. I thinkhe w orked at Shanghai on weekends for many, many years!

Swift Canadian, Canada Packers and Burns were all slaughter houses, meat packing plants located on Archibald St. S of Marion in St. Boniface, MB. All were still operating in 1963 when I was a student and working there on the shipping dock.

I have vivid memories of Uncle Val in his blood stained white Swift coat and hard hat. He used to bring us "pork buttons" every week which he got free for a long time, and then for $.05 / pound. We really loved these and looked forward togetting them
